This is an 8-inch chef's knife designed for handling all your most frequent kitchen tasks: chopping, mincing, slicing, and dicing.
The Petty is the ultimate kitchen knife. In fact, I use it as my everyday knife!
It has been said that in order to survive in the kitchen you really only need two kitchen knives - a paring knife and a chef knife. The Petty utility knife challenges that notion. This classic Japanese blade shape works great as a peeling, paring, boning and carving knife for vegetables, fruits, herbs and other delicate work. However, it will also take on some of the slicing and dicing jobs of a large chef knife.
Both are made with a US High-carbon,stainless tool-steel blade, for sharpness and edge retention. If you're starting out with a knife like this, you can be sure that you'll keep a sharp edge without using a steel every time you pick it up. (We'll get to the steels later!)

Always wash your knives by hand and dry immediately. Store them in a way that protects the blade.
